My Mom's Soothing Okra Sambar Recipe. My mom usually prepares sambar recipe on any auspicious day and this recipe is exactly what she uses to nail it. This recipe is pretty straightforward But once I started cooking, RK tasted my sambar, and he has become a die-hard fan, just like any other South Indian.

Ingredients of My Mom's Soothing Okra Sambar

  1. Prepare 250 gms of okra cut into cubes.
  2. Take 2 cups of tamarind water.
  3. Take of As needed: Salt.
  4. Prepare 3-4 tablespoons of gingelly oil.
  5. Prepare 1 tsp of Turmeric powder.
  6. You need of Seasoning.
  7. Prepare 1 tsp of Mustard seeds.
  8. Make ready 1 tsp of chana dal.
  9. Make ready 2 tsp of urad dal.
  10. Prepare 1/4 tsp of asafoetida/hing.
  11. It’s 2 of Green chillies slit lengthwise.
  12. You need 1 sprig of curry leaves.

Last week a reader mailed me to blog basic sambar & vathakuzhambu recipes.So i thought of sharing this recipe which might be useful for Tamil new year lunch menu too.I usually make vendakkai sambar. even with udupi okra sambar there are several variation to this popular bende koddel or bendekayi huli. the main variation with the recipe is the way it is prepared. basically you can see vendakkai sambar recipe prepared with or without grounded coconut or freshly prepared grounded sambar masala.Idli/ sambar breakfast combo, is a hot favorite of not only South Indians but also of people from other parts of India.

My Mom's Soothing Okra Sambar step by step

  1. In a pot, add oil and put in the items given under seasoning section. Wait till the dals become golden brown..
  2. Add in the chopped okra and mix well. Toss until okra is cooked well to about 80%. Make sure it is not completely cooked as it turns mushy..
  3. Add in the tamarind water and let it boil covered until the raw smell goes off. Now, add in turmeric powder along with required amount of salt..
  4. Finally, when all the raw smell have gone of turmeric, turn off heat and close it until serving..
  5. Tip: note that this sambar is supposed to be watery as against the usual thick varieties. The runny texture and the thick okra blend well with rice. The more thicker it becomes, the proper taste of okra is lost. Also, add no other seasoning like sambar powder or cilantro/coriander leaves. They take the authentic taste away from this recipe..

My mom makes it perfectly and she even says it is perfect for beginners in cooking as it comes out easily tasty, how ever you do small mistakes.And also ladies finger needs special treatment before adding to sambar, so I thought I will post this basic sambar recipe using my mom's sambar powder.This is my mom in law's basic sambar recipe for rice in which we use lady's finger @ okra.
